This is the recipe I made up for a very simple coleslaw with pineapple hidden in it so that my nieces and nephews are eating healthy, even when they don’t realize it 🙂
1 large can of crushed pineapple
1 cup of avocado mayo (or any mayo)
1 clove of garlic
*Adult friendly options: more garlic, hot sauce or red chilies, black pepper & curry powder
1 package of shredded broccoli, cabbage and kale
1 package of shredded multi coloured beets
*Adult friendly options: trail mix, nuts, dried cranberries or raisins…the possibilities are endless!
I blended one large can of crushed pineapple together in my Vitamix with one cup of avocado mayo but you can use any mayo you choose. I also added one clove of garlic, although if it was being made for adults, I would use more garlic and I would also include some hot sauce or red chilies, as well as black pepper and curry powder.
Since this was for the kids, I just blended in some fresh garlic and a bit of salt to give it a little bit of sharpness. And that’s pretty much it for the sauce. Then I just added it to two packages of shredded broccoli, cabbage and kale. As well as a package of shredded beets so that it was a festive looking combination. If the pieces are too big, I chop them up fairly small.
The coleslaw is best after a few hours in the fridge, especially when you add trail mix. Everything soaks in the sauce and it is delicious!
